====== Chickpea Salad ======
From the chickpea salad sandwiches in //Vegan for Everybody// (pg 122). So delicious. Maybe go for open face sandwiches or soft bread.

===== Ingredients =====
  * 2 cans (~3 cups) chickpeas
  * 1/2 cup [[recipe:vegan_mayo|vegan mayo]]
  * 1 tbsp lemon juice
  * 2 celery ribs
  * 1/3 cup pickles
  * 2 scallions
  * 2 tbsp fresh dill (or parsley, tarragon, etc)

===== Directions =====
  - Puree 3/4 cup chickpeas, mayo, lemon juice, and 1/2 tsp salt in a food processor((original recipe adds 1/4 cup water here but I find that too wet)).
  - Add the rest of the chickpeas and pulse just a few times, so they're mixed in and partially chopped up.
  - Chop/mince/whatever the remaining ingredients, mix, and season to taste.
