====== Mochi Muffins (Ok They’re Cupcakes) ======
This was original posted on snixxy kitchen but it got deleted??? Incredibly rude but [[https://510foodie.com/mini-mochi-muffins/|510 foodie]] saved the day. 

===== Ingredients =====
  * 350 g sweet rice flour (2 c)
  * 240 g brown sugar (1 c)
  * 2 t baking powder
  * 1/2 t salt
  * 1/4 c butter, melted
  * 1 can coconut milk
  * 2 eggs
  * 2 t vanilla
  * dash of molasses, optional
  * 2 T each of black and toasted sesame seeds that I _always_ forget to sprinkle on top 

===== Directions =====
  - Preheat oven to 350F
  - Mix dry ingredients
  - Mix wet ingredients
  - Mix together and beat well
  - Pour/scoop into muffin pans
  - TOP WITH SESAME SEEDS COME ON YOU CAN DO IT
  - Bake. ~25 mins for mini muffins or like 50-60 for regular. They should be pretty brown.
