Chickpea Salad

From the chickpea salad sandwiches in Vegan for Everybody (pg 122). So delicious. Maybe go for open face sandwiches or soft bread.

Ingredients

Directions

  1. Puree 3/4 cup chickpeas, mayo, lemon juice, and 1/2 tsp salt in a food processor1).
  2. Add the rest of the chickpeas and pulse just a few times, so they're mixed in and partially chopped up.
  3. Chop/mince/whatever the remaining ingredients, mix, and season to taste.

original recipe adds 1/4 cup water here but I find that too wet
