So, while I was searching for the whoopie pie recipe, I ALSO found this little gem. It's hand written in my terrible penmanship, looks like maybe form when I was 12, I was somewhat addicted to these. We always called them molasses cookies, but I think everybody else calls them ginger snaps? But, I think of ginger snaps as crunchy and these, when done right, are very chewy.
7/3/2026 - made some today - delicious as always though thinner than usual. Should have gone with the urge to add a little more flour. Maybe part of the issue was that we only had 1/2 cup of crisco so substituted 1/4 cup butter - tastes great - flat cookies but still soft and chewy.
