Oven Baked Scallops

I've asked my sister for this recipe like nine times. Digging through the various recipe places today I found two copies of it. I'll put it here in resippy where it will be safe!

You would think that scallops cooked that hot for that long would be chewy, but you'd be wrong.

  1. melt butter and just coat the bottom of a shallow baking pan with it (I use a glass dish…)
  2. sprinkle some Ritz crumbs on the bottom of the pan
  3. dry the scallops, dip them in beaten egg and coat with Ritz crumbs
  4. arrange them in the dish - no need to leave space between them
  5. sprinkle another layer of Ritz crumbs on top
  6. Drizzle one stick of melted butter *and* 1/2 stick of melted margarine over the top (yeah, no margarine unless you've been making whoopie pies…)
  7. bake at 450 for 15-20 minutes
