These are from Straight From the Earth, tucked into a recipe for plantain tacos. They're great in a taco with fried plantains, mango salsa, and guac - but also great in general.
Ingredients
1/4 cup olive oil
1 small onion
2 bay leaves
4 large cloves garlic
2 tsp cumin
2 tsp oregano
1 tsp salt
~3 cups/2 cans black beans
3 tbsp tomato paste
Directions
Dice the onion and sautee in the oil with the bay leaves until soft. Mince the garlic.
Add garlic, spices and salt. Cook for a minute or two.
Add the beans, tomato paste, and 1/2 cup water. Cook a few minutes, until most of the liquid evaporates.
