Ruthies Chicken

Adapted form the Klutz book 'Kid's Cooking' - a long time family favorite - saved here only because I never remember cook time or temperature.

One day when we were out of corn flake crumbs I tried panko, bread crumbs and something else, maybe Italian bread crumbs. All three were good. The panko was arguably better than cornflake crumbs…

  1. Preheat the oven to 350
  2. melt the butter
  3. wash and dry the thighs and then, for each:
  4. sploosh it in butter, cover it in cornflake crumbs, put it in the baking pan
  5. sprinkle the thighs with paprika and seasoned salt
  6. bake for about an hour, until the meat easily comes from the bone
