Jes Preferred Brownies

I want them chewy, okay? Not fudgy, not cakey, not extra rich or whatever else and not full of chocolate chip interruptions. These need a little tweaking to be exactly right but they're by far the closest yet. And the recipe is dead simple! Like half an hour total. That's cool. Thanks King Arthur.

For brownie bites: 15min in a dark mini muffin tin

Ingredients

  • 1 c (120g) AP flour
  • 3/4 c (64g) cocoa, dutch or regular
  • 1 3/4 c (347g) sugar
  • 1/2 t salt
  • 1/4 t baking powder
  • 1 t espresso powder, optional
  • 3 large eggs
  • 8 T (113g) unsalted butter, melted
  • 1/4 c (50g) vegetable oil
  • 2 t vanilla

Directions

  1. Preheat oven to 375F and lightly grease a 13×9. Not an 8×8 or 9×9 for thicker brownies because then they'd be less perfectly chewy.
  2. Put everything in a bowl in the order listed and beat until smooth.
  3. Dump the batter in the pan and bake for about 25 minutes, until just beginning to pull away at the edges and a toothpick comes out clean or just crumby, not wet.
  4. Cool completely before cutting???
