Molasses Cookies

So, while I was searching for the whoopie pie recipe, I ALSO found this little gem. It's hand written in my terrible penmanship, looks like maybe form when I was 12, I was somewhat addicted to these. We always called them ,glasses cookies, but I think everybody else calls them ginger snaps? But, I think of ginger snaps as crunchy and these, when done right, are very chewy.

Ingredients

  • 2 cups flour
  • 1/2 t salt
  • 1 t cloves (ground, I assume)
  • 1 t ginger (def, dry, ground ginger)
  • 3 t baking soda
  • 3/4 cup crisco
  • 1 cup sugar
  • 1 egg
  • 1/4 cup molasses

Directions

  1. sift the dry ingredients together
  2. cream the shortening in a mixer gradually adding the sugar until light and fluffy (huh, seriously that was 'sift together most of the dry ingredients…)
  3. blend in the egg and molasses
  4. stir in the flour mixture
  5. make 3/4“ to 1” balls and roll in sugar
  6. place on ungreased cookie sheets 3“ apart
  7. flatten with fingers and sprinkle on more sugar (get that cool coarse sugar!)
  8. bake for 8 to 10 minutes at 350
