Red Cabbage Coleslaw

I threw this together for a cold side for a socially distanced outdoor lobster boil on a day way too hot for Roasted Potatoes, another favorite side. I'd made something similar before with white cabbage - really this is more of an inspirational guide than a strict recipe, but this is what I made that night and it was delicious.

All quantities to taste. Make it up.

Ingredients

  • red cabbage, sliced thin and short or chopped however you like it
  • thin sliced red onion
  • craisens (dried, sweetened cranberries)
  • apple, chopped small
  • pecan pieces (I used raw, but toasted would be fine)
  • mayonnaise thinned with a spoonful of orange juice
  • salt & pepper to taste

Directions

  1. Mix all chopped ingredients
  2. Mix in the thinned mayo, but be careful! Don't over do the dressing. You can add more, it is more difficult to take it back. Make it ahead of time and let it sit, stir again before serving.
  3. Don't forget the salt & pepper (or skip it and see how you like it that way first).

Variations

  1. Add cilantro, jalapeño or other spicy or hot ingredients.
  2. White cabbage, golden raisens, white or green onion, green apple, walnuts or peanuts or whatever
  3. Thin the mayo with something else sweet, tart, or spicy.
