Tiramisu

Based loosely on https://www.allrecipes.com/recipe/21412/tiramisu-ii/ and what ingredients I actually had available.

Ingredients

  • 3 egg yolks
  • 3/8 c sugar
  • 1/3 c milk
  • 5/8 c heavy cream
  • 1/4 t vanilla
  • 1/2 lb (500 g) mascarpone, room temp if planning ahead
  • 1/2 c coffee
  • 1/4 c dark rum
  • one batch or 2 3oz packages of lady fingers
  • cocoa powder for dusting

Directions

  1. Blend egg yolks and sugar in a saucepan, then add milk. Bring to a boil over medium heat, stirring constantly, and simmer for 1 minute. Let cool enough to cover tightly and chill in the fridge for 1 hour.
  2. Beat cream with vanilla to stiff peaks.
  3. Whisk mascarpone into yolk mixture until smooth.
  4. Mix coffee and rum in a shallow bowl or plate. Get out 8×8 dish or similar.
  5. Dip each lady finger for a brief soak in the coffee/rum and form a layer in the bottom of the dish. Spread half the mascarpone mixture and then half the whipped cream. Repeat to form a second layer then sprinkle with cocoa.
  6. Cover and refrigerate 4-6 hours, until set.
