From a vegan “fish” tacos recipe. Great in many taco settings.

• 1/4 cup (vegan) mayo
• 1-2 tbsp lime juice
• 2 tsp honey (or agave nectar or maple syrup)
• 1 jalapeno, seeded and minced
• 1/2 tsp garlic powder
• 1/2 tsp salt
• 2 cups purple cabbage, shredded or chopped
• 1 cup frozen corn
• 1/4 cup chopped cilantro (or not)

1. Mix up dressing from mayo, lime juice, honey, garlic powder, and salt.
2. Toss with cabbage, corn, jalapeno, and cilantro.
