Veggie Fried Quinoa

I love this dish, Marla loves this dish. Nick really does not like it. It's really quick, very inexpensive, delicious, healthy - who raised him?

It feels a little wrong to use powdered ginger in a little bottle from McCormick - but it's supposed to be a quick meal and who has time to grind (?) fresh ginger and I think the flavor actually melds better with the fine powder - plus I don't measure - just sprinkle away until I'm sure I definitely got a 1/2 teaspoon. I don't measure the soy sauce either…

Ingredients

  • 1 tablespoon toasted sesame oil or coconut oil
  • 1 - 2 garlic cloves minced
  • 3 - 4 cups cooked quinoa chilled
  • 1 16oz bag organic frozen veggies, any variety
  • 2 large organic eggs
  • 2 - 3 tablespoons soy sauce
  • 1/2 teaspoon ground ginger

Directions

  1. Heat the oil and garlic in a large skillet or wok over medium-high heat, stirring until fragrant about 30 seconds.
  2. Add quinoa and veggies and cook until starting to soften and coated in flavoring, about 2 minutes.
  3. Push this mixture to the side of the pan and crack both eggs directly into the hot skillet. Scramble with a fork until cooked through. Stir into quinoa-veggie mixture.
  4. Pour soy sauce over pan, sprinkle with ginger and toss to combine, cooking for another minute or two until nice and hot.
  5. Taste and adjust seasonings accordingly.
  6. Serve immediately and enjoy!
